The estate, divided around the villages of Montpeyroux and Saint Jean-de-Fos, is managed in organic culture. It shares the Languedoc appellations Montpeyroux and Terrasses du Larzac. The concentration and richness of the wines are mainly due to the low yields (15 to 25 hl/ha). The red grapes are harvested by hand in crates before being sorted and destemmed in the cellar. They are fermented following a slow extraction during long vatting periods (five weeks). Four reds, two whites, a rosé, a brandy of marc and a carthagène, compose the range.
The blends are made with respect to terroirs and grape varieties, to give powerful, elegant and original wines.
